Germany: Cabbage Rolls (Kohlrouladen)
Cabbage is a staple of traditional German cuisine. Alongside the famous sauerkraut, these cabbage rolls are filled with minced meat and rice. Kohlrouladen are juicy, aromatic, and full of flavor, combining simple ingredients to create an exquisite dish perfect for Christmas.
Ingredients:
To prepare the filling, put all the ingredients in a bowl:
- One kale
- 1 bowl of ice water
- 3 tablespoons of butter
- 500 ml of chicken broth
- 150 g of crème fraîche or cream Salt
- Pepper
- For the filling:
- 500g minced meat (half pork, half beef…I only had pork)
- One onion
- 120g cooked long-grain rice
- 2 tablespoons fresh parsley
- Salt
- Pepper

England: Cauliflower Cheese
This recipe is one of the most popular in the UK. Traditionally, it’s served as a side dish with Sunday Roast. A simple and delicious cauliflower and cheese recipe to accompany roasts or serve as a main course on your Christmas table.
Ingredients:
- 1 cauliflower.
- 50g butter.
- 50g all-purpose flour.
- 600ml whole milk (warmed).
- 1 tsp English mustard (you can use another strong, spicy mustard; avoid sweet mustards and whole-grain Dijon mustards).
- 100–150g grated mature Cheddar cheese (reserve 50g for topping).
- 25–30g grated Parmesan cheese.
- A pinch of freshly grated nutmeg.
- Freshly ground black pepper.
- 2 tbsp breadcrumbs (optional, for topping).
- Extra butter for greasing the roasting tin or mixing with the breadcrumbs.
- Salt.

Netherlands: Stamppot
A classic dish of traditional Dutch cuisine, stamppot is a mashed potato mixed with vegetables such as kale or carrots, and served with smoked sausage. It’s ideal for cold days, very easy to prepare, and a staple in Dutch homes during the Christmas holidays.
Stamppot Ingredients:
- 1 smoked sausage.
- 5-6 medium potatoes (1.2 kg).
- Salt.
- 1 bay leaf.
- 2 tablespoons butter.
- 1 cup milk.
- Nutmeg.
- Black pepper.
- 250 g kale leaves.
- 1 spring onion.
- 2 tablespoons extra virgin olive oil.
- A splash of water.

Norway: Chopped Salad
This Norwegian “chopped” salad is an ideal and exotic option, perfect as a starter for your Christmas lunches and dinners.
Ingredients:
- Balsamic vinaigrette
- Iceberg lettuce
- Marinated salmon
- Egg
- Cucumber
- Mango
- Ratte potato
- Arugula
- Tomato

Sweden: Grönsakskaka
One of Sweden’s typical dishes is broccoli and potato pancakes, easy to prepare and delicious with meat or fish, or as a vegetarian dish on their own.
Ingredients:
- 200 grams chopped broccoli.
- 300 grams peeled and diced potatoes.
- 100 grams grated Monterey Jack cheese.
- 85 g leek (white part only), finely chopped.
- 85 g onion, finely chopped.
- 1 large garlic clove, finely chopped.
- 1/2 teaspoon salt.
- 1/4 teaspoon pepper.
- 1 egg.
- 3 tablespoons flour.
- 1 tablespoon olive oil.
- 4 tablespoons water.

Spain: Grilled Cauliflower Steaks
These cauliflower steaks are ready in about 30 minutes with just 4 ingredients. It’s a delicious way to include more vegetables in your Christmas dinners and lunches.
Ingredients:
- 5 tablespoons olive oil.
- 1 medium cauliflower.
- Spices for the sauce.
- 1 small nutmeg.
- 4 tablespoons whole black peppercorns.
- 5 cloves.
- 1/2 cinnamon stick.
- 4 tablespoons cumin seeds.
- 3 tablespoons coriander seeds.
- 1 tablespoon cardamom pods.
